The history of Perigord is full of wars: the Hundred Year War, wars of religion, the Peasants’ Revolt. After the French Revolution, the region suffered terrible shortages!... Women used their culinary know-how from the castles to learn to preserve food. Preserves are an institution in our country. The use of simple and natural regional products... of salt and pepper...
