‘AOC' is a French seal (in French, it stands for guaranteed origin and quality) given to a product that fulfils strict and monitored specifications.
The kernel is the fruit of the walnut. It is a health product, a renowned anti cholesterol, added to which, it is delicious!…
It can be used in most preparations, in salads, desserts…
Perigord walnuts are to do with the environment and national heritage:

• it is a ‘green’ non polluting crop
  
• walnut groves are an outstanding part of our regional countryside
  
• walnut wood produces stripe, burr, mottled, wavy and roe figures. Walnut is undoubtedly one of the most sought after woods.
